This is due to the variation diminishing property of Bézier curves, which becomes more pronounced with high degree Bézier curves https://en.wikipedia.org/wiki/Variation ... g_property
While trying to minimize the error between the desired path and the Bézier approximation with numerical methods, at some point it becomes so insensitive to changes in the position of anchors, that the final position of the anchors can be far from the ideal position (even if the error is small numerically, in this case less than a pixel off at each point).
