I've had this done to me before a long time ago.

It could be a bad beatmap so I suggest maybe doing trial and error, deleting 1 beatmap at a time and restarting osu until it works.

Question, are we limited to the number of beat-maps we can have on the game? cuz i have 138 and Osu! wont even start :/

probably too much for your iphone/itouch to handle.
also, if it exits when opening osu! and you don't have too many beatmaps, try restarting your iphone/itouch and try again. this sometimes works.

well what I noticed when I first booted up osu! it took a long time for it to load, perhaps because it was setting up whatever it needs. Next time I opened it the loading time was almost negligible. What I'm thinking is take out about half the beatmaps on your ipod/iphone and then try booting the app again. It just might work.

This is true, since that the memory/RAM on the iPhone/iPod are limited if you have alot of maps they will take a while to load into memory and if it exceeds memory it may crash, so jsut try even one map 1st to know that osu! wrks and then keep adding maps thereon.
